Creamy Vegetable Soup:
1/2 Vegetable Medley
enough liquid to cover (water or broth)
1 tbsp butter
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp chili powder
3-4 tbsp flour
1 cup liquid (milk, water or broth)
In a bowl, place dried vegetables and cover with boiling water or broth. Let sit for 15 minutes.
Add butter to a pot on medium heat and let melt. Add salt, pepper, garlic powder, chill powder (and additional seasonings) and flour to butter. Stir together (form a roux). Once the flour and butter mixture has formed a paste, slowly incorporate liquid, waiting until mixture bubbles before stirring and adding more liquid. Once desired consistency has been achieved, add rehydrated vegetables to pot and simmer on low for 10-15 minutes or until vegetables are soft.
